Make these biscuits for your dinner or as dressed up biscuits for a holiday dinner side, instead of proofing holiday bread for hours on end. This Sourdough Cheesy Biscuits recipe is perfect with oven fried chicken with gravy or served as a side.

 

My goal was to create a perfect blend between a Popeyes Biscuit with how soft on texture it is and flaky Pillsbury type of biscuit because of the flakiness. And I was able to get that even more because sourdough gives a wonderful depth of flavor , you can’t find it at a fast food restaurant or a ready made dough from the supermarket.

So I  learned by trial and error on my own how to make the perfect biscuit for my family For a few years I made biscuits on and off and it was a hit or miss. I either used too much butter or not enough. I was such an amateur in those days I didn’t understand gluten either and how to handle it.

Luckily for you I’m sharing all I learned about what works best for making the softest, cheesy, buttery Sourdough Biscuits that will satisfy your entire family and friends.

What You’ll Need
Sourdough Discard: Yes, the star of the show I usually use discarded sourdough starter but you can also use a recently fed starter.
Butter: I use unsalted because it tastes better and doesn’t make your food too salty.
Organic All Purpose Flour: be sure to use good quality flour it is attributed  to the texture and taste of your biscuit.
Curdled Milk: I use curdled milk to soften up the dough even more, for a very light texture.
Baking powder:  for rising makes sure to choose a healthier rising agent with no aluminum.
Salt: Balances out the taste of your added sugars.
Organic Cane Sugar: balances out the salt added to the dough.l for a nice flavor.
Cheddar Cheese: I used high quality grass fed Irish cheese, it brings a sharp cheddar flavor.





How To Make Sourdough Cheddar Biscuits 



Add all your dry ingredients to a large mixing bowl and whisk in well.
Then add your sourdough starter , grated cheese and cubed cold butter.
Gently mix with hands til there’s no dry parts left , take special attention to the butter, squeeze in your finger tips to flatten it or use a pastry cutter.
Gently form into a ball , and place in the fridge covered for 10-15 minutes.
Lightly flour your surface, roll out the dough and fold over itself twice to create the flakiness in the biscuits.
Roll out again , now cut out your biscuits with a knife or biscuit cutter.
Place in skillet then preheated oven at 400
remove after 20 – 25 minutes and enjoy!


Should I Freeze The Butter For The Biscuits Before Baking?
Yes, when the butter has been chilled in the freezer the butter in your dough will remain intact therefore allowing a flaky biscuit once rolled out and folded.



How Long Do I Bake Biscuits at 400F
I like to cook my biscuits at 400°F for 20-25 minutes. To me this is the most ideal time and temperature.





How Do I Know When The Biscuits Are Done?
I always check the shade of color on the bottom of one biscuit to look for a golden tan complexion. How do I get a golden top color only because of the type of oven I have, I turn on the broiler for 1 to 1 ½ minutes and then take them out of the oven.

Ingredients
  

  • ½ cup Sourdough Starter
  • cup Organic All Purpose Flour
  • 7 tbsp Cold Cubed Butter
  • 1 tsp Himalayan Pink Sea Salt
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tbsp Organic Cane Sugar
  • 1 cup Dubliner Cheddar Cheese

Milk Curdle

  • 1 cup Organic A2 Milk
  • 1 whole Lime Juice

Instructions
 

  • Place your butter in the freezer for at least 30 minutes prior to creating the dough.
    7 tbsp Cold Cubed Butter
  • Add milk and lime juice to a measuring cup and let stand for 5-8 minutes to curdle.
    1 cup Organic A2 Milk, 1 whole Lime Juice
  • Add flour, sugar , salt , baking powder, baking soda , dry ingredients to your bowl.
    2½ cup Organic All Purpose Flour, 1 tsp Himalayan Pink Sea Salt, 2 tsp Baking Powder, 1 tbsp Organic Cane Sugar, ½ tsp Baking Soda
  • Next add your sourdough starter and cold butter , begin cutting in the butter with your hands pressing the cubes into smaller flat pieces. Alternatively you can use your pastry cutter to cut in the butter as to not get your hands messy, like me.
    1/2 cup Sourdough Starter, 7 tbsp Cold Cubed Butter
  • Add your cheese then gently mix your batter till you don't see any flour bits left, do not over mix ,over mixing will cause the biscuits to be tough. Dough will be a little sticky and that's fine.
    1 cup Dubliner Cheddar Cheese
  • Place dough in the fridge to rest for about 10 minutes.
  • After ten minutes take the dough out of the fridge and place onto a lightly flour surface. Flour your rolling pin and roll the dough out to about a 2 inch width.
  • begin cutting out your biscuits, work quickly because you do not want your butter to melt during this process.
  • Once you have cut out all you're biscuits place then on your skillet.
  • Place in a preheated oven at 400 degrees and bake for 25-30 minutes . And now you have flaky buttery biscuits that you and your family can enjoy!

Notes

Mix with Carefully: Be gentle when combining your biscuit ingredients. Overmixing makes them tough, so stir until just combined.
Ice Ice Baby: Chill your ingredients, especially butter or shortening. Cold ingredients are the way to getting those perfect layers.
Hail Baking Powder: In my opinion the power of baking powder in your biscuit is vital to that soft airy light texture. It’s the silent force behind that ideal rise.
Light Hands: Treat your biscuit dough like it’s delicate, because it is. When cutting shapes, go easy – pressing too hard can hinder their fluffiness.
Preheated Oven: Be sure your oven is preheated before your biscuits ar put into the oven. A well-preheated oven is key to biscuit success!
Keep Watch: Keep a watchful eye on your biscuits as they bake. Overdoing it in the oven can turn your soft dreams into crispy realities.
Flour Matters: Go for all-purpose flour; Choosing the wrong flour can throw off the delicate balance of your biscuit creation.
