Notes

Choosing the Right Bread
thick slices of bread, such as brioche, challah, or French bread. Stale bread works well, it absorbs the custard mixture better. I chose to baker my own cinnamon sugar bread for this recipe.
High Quality Ingredients:
Use fresh pastured eggs if you can and high-quality dairy milk for the custard mixture.
Allow Bread to Soak:
Dip each slice of bread into the custard mixture, make sure both sides are well-coated. Let it soak for about 20-30 seconds, but don't let it get too soggy.
Preheating the Pan:
Preheat your skillet or griddle over medium heat. Add a little butter or oil for a golden and crispy outer coating.
Cooking Temperature:
Cook the French toast on medium heat to allow the custard to cook through without burning the top. Unless you like it like that... like me
Cook Time:
Cook each side until golden brown and slightly crispy, usually 2-4 minutes per side.
Flip Carefully:
Use a spatula to flip the French toast gently to avoid breaking the slices. Cook the other side until it reaches your desired doneness.
Keep Warm in the Oven:
If making a batch, keep the cooked slices warm in a preheated oven (around 200°F or 93°C) until ready to serve.
Toppings and Garnishes:
Serve with toppings like maple syrup, powdered sugar, fresh fruit, whipped cream, or a dusting of cinnamon.
Serve Immediately:
toast is best enjoyed fresh off the griddle. Serve it immediately for the best taste and texture.
Experiment with Soaking Time:
Adjust the soaking time based on the thickness and type of bread you're using. Thicker slices may need a bit more time to absorb the custard.
Avoid Overcrowding:
Cook only a few slices at a time to prevent overcrowding the pan, it can cause uneven cooking.
