Sourdough French Toast

The Best Freaking French Toast ever!

Some of my earliest memories involve food. Yes, I’m that much of a foodie! I can still remember when my dad used to make French toast for breakfast. The smells that would come from the kitchen were incredibly mouthwatering. As a West Indian American kid, it felt like a treat eating something so different like French Toast for breakfast.

The soft, crisp, sweetness in every bite was unforgettable. As a adult I hadn’t revisited this breakfast until Thanksgiving was coming around and I wanted to make a special breakfast for my sons. I wanted to make them something they’d never had before and was kinda fancy. But wouldn’t put stress on me to make, because I recently gave birth to a beautiful baby girl in October.

So I started researching Sourdough recipes for some inspiration on Pinterest and found some pretty darn good sourdough French bread recipes. One issue was the brioche I don’t have the time with a newborn but still wanted something amazing. So instead, I made cinnamon swirl bread loaf 2 days before Thanksgiving morning for this recipe.

I did a no knead dough using the stretch and fold method, this always works for me when I’m in a pinch (usually always) and need to get bread on the table. My boys were so filled with joy when I served this!

I to was amazed at how fancy this sourdough French toast tasted; instantly French toast became my favorite breakfast item of all time!

I know you will enjoy this just as much as my family has, this recipe is so easy to make plus no one will know how much little effort was put into it. We’ll keep that between us.

Tips

  • Don’t skip the vanilla essence, it really brings a depth of flavor to the custard coating.
  • se fresh pastured eggs if you can and high-quality dairy milk for the custard mixture.
  • If making a batch, keep the cooked slices warm in a preheated oven (around 200°F or 93°C) until ready to serve.
  • Cook only a few slices at a time to prevent overcrowding the pan, it can cause uneven cooking.

What You’ll Need

  • Sourdough Bread: I made my bread 2 days prior or just use cinnamon swirl bread
  • Milk: Milk, Cream or half & half would be fine
  • Eggs: Be sure to use good quality eggs, I used pastured raised eggs
  • Cinnamon: Ceylon is the healthiest one, but I used Saigon
  • Vanilla Extract: Very important don’t skip this item.
  • Organic Cane Sugar: skip the sugar or use any sugar replacement with a 1:1 ratio.

Notes

Choosing the Right Bread
thick slices of bread, such as brioche, challah, or French bread. Stale bread works well, it absorbs the custard mixture better. I chose to baker my own cinnamon sugar bread for this recipe.
High Quality Ingredients:
Use fresh pastured eggs if you can and high-quality dairy milk for the custard mixture.
Allow Bread to Soak:
Dip each slice of bread into the custard mixture, make sure both sides are well-coated. Let it soak for about 20-30 seconds, but don’t let it get too soggy.
Preheating the Pan:
Preheat your skillet or griddle over medium heat. Add a little butter or oil for a golden and crispy outer coating.
Cooking Temperature:
Cook the French toast on medium heat to allow the custard to cook through without burning the top. Unless you like it like that… like me
Cook Time:
Cook each side until golden brown and slightly crispy, usually 2-4 minutes per side.
Flip Carefully:
Use a spatula to flip the French toast gently to avoid breaking the slices. Cook the other side until it reaches your desired doneness.
Keep Warm in the Oven:
If making a batch, keep the cooked slices warm in a preheated oven (around 200°F or 93°C) until ready to serve.
Toppings and Garnishes:
Serve with toppings like maple syrup, powdered sugar, fresh fruit, whipped cream, or a dusting of cinnamon.
Serve Immediately:
toast is best enjoyed fresh off the griddle. Serve it immediately for the best taste and texture.
Experiment with Soaking Time:
Adjust the soaking time based on the thickness and type of bread you’re using. Thicker slices may need a bit more time to absorb the custard.
Avoid Overcrowding:
Cook only a few slices at a time to prevent overcrowding the pan, it can cause uneven cooking.
